Day Five

I successfully completed 5 days in a row of 30-day shred! I am so pumped! I am taking the week-end off because we are going skiing tomorrow! I am excited about going because the last time I went, I didn’t have the best day. I felt like I was off all day. So tomorrow I am going to just go and relax. My husband, the super pro skier, says I look super stiff. So maybe tomorrow I will have a better day. I am hopeful!

I’m keeping this short because it’s Friday and I off to enjoy some wine! Happy Friday!

Day Four

I did day four of my 30-day shred this morning.  I felt so tired when I first got up, but after I got going I started to wake up.  I am glad I got up and worked out before work because I feel like I have a little more energy at work lately.  I am pretty sure it is because I have been working out.  Plus I have been super busy at work and if I had to come home and try to work out, I know I would just put it off.  It feels rewarding to get it done first thing in the morning.

My husband has also been getting up early to workout.  A long time ago (almost a year ago) he told me he needed to get the Wii Fit so he could get in shape before our wedding (which way in May 2009). I think he used it for about a week before it was stored away. Occasionally he would take it out and do a little workout here and there. But for the most part, he never did it.

So when I told him I was going to workout every morning, he said he needed to too. I have to say I am glad he is trying to workout more too.  I wake him up after I get done with my 30-day shred DVD and then he does the Wii fit.  Our dog, Moose, even gets up with him.  He sits there and just watches him and when he does a different move, he tries to play with him.  It is rather comical.  Either way, everyone is getting some exercise, which is great!

Day Three

So today started off really good. I woke up and did day three of the shred DVD workout. I even started to feel a little stronger during the workout. I felt better about waking up early too.  It was not as hard today as it was yesterday. How many days does it take to form a habit?

Then the rest of the day progressed and eventually turned into one of those days. So when I got home from work all I could think of was one word:

Wine! That’s right, all I wanted tonight was a nice glass of wine. Sometimes when things are a little stressful, some wine is in need.

And of course who can resist this face when you come home?

My dog, Moose, loves to stand in the kitchen and stare at us when we are cooking. We always try to to keep him out but he is pretty sneaky.  A little quality time with my husband and Moose, sure made the day better.

Here’s hoping that tomorrow turns out better than today!

Day Two

So day today is day two of my 30-day shred.  It was soooo much harder to wake up early and work out today than it was yesterday.  When my alarm went off, I almost hit snooze so I could stay in my warm bed.  But I made myself get up because how can I start slacking on my 2nd day!?!?

Which makes me wonder about motivation.  How hard is it to get yourself motivated to work out?  I know that for myself, I can go strong for a week or so, but then loose my drive.  I need ideas to keep myself going! I am hoping that by blogging about my day to day work outs, that I will hold myself accountable and keep going.  I told my husband I was going to blog everyday this month. We will see if that works out!

Tonight when we got home from work, me and my husband took our dog, Moose, for a walk.  I love when daylight savings happens. More time in the evening makes me much more productive.  The walk was a little chilly. I think we might be getting some more snow!

Day One

Lately I have been feeling tired, run down and kind of lazy.  And in all honesty, I hate it. I do not want to come home from work every night and feel too tired to do anything.  I want to have more energy in the evening.

So I have decided to make a lifestyle change and I cannot think of a better way to keep me motivated than through my blog.  For a while I have been reading so many great blogs that all emphasize a healthy lifestyle and I know I can do it too.  Plus I have wanted to change the format of my blog.  I don’t want to solely blog about food and new recipes.  Yes I love to cook, but I want to write about more variety.

Another driving force behind my healthy change is because (hopefully) within the next year or so I will be starting a family with my wonderful husband.  I want to be in the best health I can be before we do make that decision to add one more to our family.

So today I figured would be a good day to start fresh. To get some exercise going, I started my first day of Jillian Micheal’s 30-Day Shred program.  I woke up earlier than normal and pulled myself out of bed and completed day one of the shred.  The workout is pretty tough for the level one.  It combines strength training with some cardio and abs. I was out of breath more than once.  But afterward, it felt really good to get some exercise in.  I noticed I even had more energy today at work which is always appreciated!

For dinner, I enjoyed some leftovers and my newest addiction: sweet potatoes!

I love sweet potatoes cut up, sprinkled with garlic sea salt and a little olive oil.  They taste amazing and I cannot get enough of them.  I also enjoyed some fresh spinach for salad tonight.

So for my first day of healthy living/blogging, I’d have to say it was pretty successful! Keep an eye out for the new changes to Kimmy’s Kitchen!

Split Pea Soup

Not to long ago, I tried split pea soup for the first time.  I guess the look of the soup may have turned me off to it for all these years.  Whenever I saw it, I always thought of that scene from the Exorcist.  I guess no matter how hard you try, split pea soup will always look a little “different.”  But once I finally got past the look of it, I discovered that I loved it.

So I decided I wanted to make it because I couldn’t stop thinking about it.  It just so happened that the day I made it was a cold, snowy day and the soup was a welcomed warm up on a chilly day.  I made it in the crock pot because I also love the smell that fills the house all day long.

I found the recipe on Whole Foods and added some potatoes to it for a little extra flavor.

Chocolate Raspberry Cake

For my husband’s birthday I wanted to make him a cake from scratch.  No mix this time. I wanted to try something a little more challenging.  So I told him he could pick any type of cake he wanted.  His guidelines: chocolate and raspberry.  Sounded easy enough and I found this wonderful recipe from one of my favorite blogs, Sugar Plum, that sounded delicious.

As I said before, I have never made a cake from scratch.  I’ve always relied on cake mixes.  What a mistake that was! For all those years, I’ve been missing out on the fun of making a cake.  The cake was so easy to make and it turned out perfect.  Plus I know what I put in it, instead of random ingredients and preservatives that are thrown in the store bought mixes.

We celebrated my husband’s birthday last Saturday, complete with candles and some singing!  The cake was so good, super chocolaty and very rich!  But it was so worth it!

Football Cookies

This year we had a Super Bowl Party at our house and I decided it would be fun to make some cookies to match the football theme.  I tried a different sugar cookie recipe that I loved!  The cookies were soft and moist and did not get too crunchy.  The cookies were a big success and everyone commented on how cute they turned out!  I am so glad I finally tried decorating cookies with royal icing.  They look so cute and taste great!

Peanut Butter Cookies

Have you ever had a very long week and all you really want to do is bake away your worries? Well I had one of those weeks and I desperately needed some one-on-one kitchen time! For some reason the idea of spending a few hours baking, instantly makes me feel better.

I decided to make peanut butter cookies because peanut butter is an instant comfort food in my mind. My new mixer did an amazing job mixing the cookie dough; it was smooth and creamy and delicious. I also decided to throw in some chocolate, just to make sure that I made the perfect comfort food. The cookies turned out great and were gone very fast.

Birthday Present!

Last week was my birthday and my wonderful, loving, amazing husband bought me the best present ever!

Isn’t it pretty? Just kidding, but seriously, I have wanted a Kitchen Aid mixer for ages and now I cannot wait to use it! What a great birthday!!!
